I like to eat eat eat.

I'm a dork for quoting barney but my love of food is undescribeable, I may be skinny enough to hoola hoop through a cheerio but boy can I eat. I'm that one friend that everyone has that is so skinny but eats like an elephant. lol. I know it will catch up to me but till then *stuffs face*  Anyhoo I was browsing through some blogs when I came across a delicious photo of this great dish so I googled "cheese stuffed meatball" found the recipe and called it dinner!
Next time I post something I cook I promise it won't be anything with ground beef again.lol
I documented the process, here you go:

I mixed ground beef with chopped onions, one egg, bread crumbs, salt, black pepper, and all purpose seasoning
 I hate the way meat feels all squishy so I wore gloves.lol
 Here's a short clip on how to make the patties.
 Stuff the meatballs with mozzarella cheese

 I cooked the meat patties in olive oil on medium heat
 You gotta cook it till it's brown on all sides
 I prefer fresh vegetables but all we had was cabbage so I had to break out the frozen mixed vegetables. (Broccoli, caulifower, carrots)
 Sauteed the vegetables with olive oil and chicken broth, then added salt and pepper to taste
 Making homemade mashed potatoes was too much of a hastle with the endless hours it takes to boil then peeling and mashing.ughh. I used the box of potatoe flakes instead and added lots of butter & cream cheese yes, I said CREAM CHEESE to give it that homemade taste.
 The key to making out of the boxed mashed potatoes taste really good is to subsitute all that water for milk.
Voila! Mozzarella stuffed meatballs (meat patties) with sauteed vegetables and mashed potatoes (purée, if you're fancy.)

 
It was so delicious!
